I don’t know how the weather is acting where you guys all live, but in Denver Mother Nature is truly all over the place. It’s almost like the beach in that the mornings are hot, cloudless and sunny and then a storm rolls in most evenings. Even if you look at the 4 hour radar prediction on a weather app, the storms literally just develop out of nowhere in the mountains. I am sure there is some meteorological and geographical reason for this, but that wasn’t my chosen branch of science so I’ve got nothin’! The weird thing is, these storms pop up and roll on by. Most days, we just have dark clouds and thunder (enough to make Georgiadog pant and cower) but end up with no rain to speak of.
Then other days we get a crap ton of hail.
But, for these really hot days, I just have to appreciate having a cold dessert on hand. I mean, any dessert will do really, but the cold ones just take it to the next level during the summer.
My mom sent me this one years ago after she got it from Weight Watchers. It’s a healthier version of a cold pie using frozen yogurt, Jell-o pudding, cool whip, peanut butter and Grape Nuts™ and it’s really simple to put together, especially if you have a KitchenAid stand up mixer.
Just throw it all in and turn it on til mixed. Easy as, well, pie.
Cheesy, I know.

For all you health nuts: has anyone discovered PB2 yet??
This, my friends, is the powdered result of roasted and pressed peanuts that have had much of their oil removed, leaving you with 85% less fat calories than your average Jif peanut butter. Mix the powder with water and use as you would normal PB. It is an excellent way to get that peanut butter flavor without adding a bunch of fat and calories. Because who the heck is actually capable of sticking to the 1-2 Tablespoon serving size?! Unfortunately it does have less protein than regular peanut butter, but personally I use mine mostly for flavor!

Anyway, if ya’ll suffer from Sweet Tooth Syndrome or Midnight Munching Mania like some of us, give this one a try. For whatever magical reason, these ingredients kinda really do taste like a Snickers, but I have switched up the pudding flavor before to get a different taste too. Butterscotch is my JAM. It can also be poured into either a pie plate or into an 8×8″ baking dish, then cut into bars drizzled with chocolate syrup.
Technically eight servings, but I’m certain that in my house it does not last any more than five servings. Six if we’re lucky. 😀
Snickers Pie
Ingredients
- 1-1/2 cups Fat free vanilla frozen yogurt
- 1 small box Fat free/sugar free instant chocolate pudding
- 1/4 cup Peanut butter reduced fat or PB2
- 1 cup Cool whip fat free
- 1/2 cup grape nuts cereal
Instructions
- Mix all ingredients with electric or standing mixer. Pour into 8" pie plate or 8x8" baking dish and drizzle with chocolate syrup. Freeze and enjoy!
